In 2008 the University of California San Francisco Medical Center began planning for a complete overhaul of the main cafeteria on the Parnassus Campus. Located in the Moffitt and Long Buildings, the existing 12,000 sq ft cafeteria was last renovated in 1985 and had become outdated and cluttered. In addition to providing a space commensurate with the stature of the institution, UCSF wanted a more attractive dining choice for visitors and staff with increased operational efficiency to serve approximately 1,500 or more at lunch. They also wanted a quick-serve cafe with 24-hour service to cover late night hours when the Moffitt Cafe is closed.
The scope of the project included a complete replacement of all food service equipment in the servery to support a newly expanded menu including a pizza oven, Fresh Start and Chef’s Choice station and a full deli. The project’s construction was divided into four phases to ensure continued operation and minimal disruption of hospital functions. Phase 1 included the MC Express Cafe along with a temporary servery to maintain service while the existing servery was being renovated. The food service equipment in the primary kitchen was updated as well as the ventilation systems, hydronic piping and coils, exhaust hoods, and electrical and structural systems to accommodate new uses and equipment.
